Stuart Williams

Restaurant & Bar Manager

Stuart is well-known around Club Mandalay as he has been managing the Restaurant and Bar since May 2018. He comes with 13 years of hospitality experience ranging from small family-owned cafes to city hotel restaurants and bars. Stuart’s focus is front of house operations of the food and beverage department which includes the Urban Grocer offering as well as bar, restaurant and event service. Stuart enjoys a smooth red wine to wind down after a busy shift, so be sure to ask him for a wine recommendation!

Jan Hovorka

Food & Beverage Supervisor

Jan (pronounced Ya-an) is the newest addition to the food and beverage team. Along with supervising the bar and restaurant, Jan is also our Head Barista / coffee expert! He has 20+ years experience running cafes in Sydney and Melbourne. He has already made fantastic changes to our coffee service including sourcing local coffee beans and organising our new coffee machine. Be sure to see Jan for a killer cup of coffee and check out his latte art too!

Erin Courts

Food & Beverage Supervisor

Erin started at Club Mandalay in January 2019 and brought 10+ years of hospitality experience along with her. Ranging from country pubs to city hotels, she’s experienced it all. On top of supervising the day to day service of the restaurant and bar, Erin is our resident cocktail specialist and puts together our staple, specialty event and weekly cocktail specials. Be sure to try one of her creative cocktails during your next visit to the bar!

Eranga Dilshan

Executive Chef

Eranga has over 13+ years experience in the culinary world and has a unique flair for modern Australian food with an Asian twist. As our Executive Chef, Eranga creates our unique Restaurant and Takeaway menus as well as designing menus for all sorts of functions and events that are held at Club Mandalay.

Chameera Hettikankanamge

Sous Chef

Chameera brings over 13 years of cooking experience with him to his role at Club Mandalay, along with his strong desire to continually experiment with new cooking styles. As our Sous Chef, Chameera manages the kitchen staff and ensures the food remains at the highest standard possible. He also manages the sweet and savoury creations that can be found daily in our cafe cabinet.
